I always have bananas going bad so I’ve been searching for a banana bread recipe without all the sugar and processed flour. Found an awesome balanced recipe made with coconut flour. By the way, my kids LOVE it!
Ingredients:
- 4 ripe bananas
- 3/4 cup coconut flour
- 5 eggs
- 1/4 cup sugar (preferably coconut or pure cane sugar)
- 1 tsp cinnamon
- 2 tsp baking powder (or 1 tsp baking soda)
- 1/4 tsp fine salt
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts or pecans
Directions:
- Preheat oven to 350.
- In a large bowl, mash banana and then add all the ingredients. Stir or whisk well.
- Pour batter into mini muffin tins or silicone molds. Make sure to spray muffin tin well with coconut oil to prevent sticking. Bake 350 for 25 min.
- Let muffins cool. Store in an airtight container.
