Banana Coconut Flour Mini Muffins

I always have bananas going bad so I’ve been searching for a banana bread recipe without all the sugar and processed flour. Found an awesome balanced recipe made with coconut flour. By the way, my kids LOVE it!


  • 4 ripe bananas
  • 3/4 cup coconut flour
  • 5 eggs
  • 1/4 cup sugar (preferably coconut or pure cane sugar)
  • 1 tsp cinnamon
  • 2 tsp baking powder (or 1 tsp baking soda)
  • 1/4 tsp fine salt
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts or pecans


  1. Preheat oven to 350.
  2. In a large bowl, mash banana and then add all the ingredients. Stir or whisk well.
  3. Pour batter into mini muffin tins or silicone molds. Make sure to spray muffin tin well with coconut oil to prevent sticking. Bake 350 for 25 min.
  4. Let muffins cool. Store in an airtight container.
