Sweet Potato Veggie Bowl

To be honest, I do not love the flavor of sweet potatoes but they are a quality carb so I try to include easy sweet potato recipes.  Katie, my assistant, tried out this recipe and said that it was tasty and easy.  Have fun with adding your favorite toppings.


  • 2 large sweet potatoes, cooked and peeled
  • unscented coconut oil, avocado oil or EVOO (for sauteing)
  • 1 cup black beans, rinsed
  • 1/2 onion, chopped
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 3 cloves garlic, minced
  • Seasoning: cumin and sea salt
  • Topping ideas: avocado chunks, sour cream or plain greek yogurt, chopped green onions, sriracha


  1. Cook sweet potatoes separately (oven or microwave), then peel skin.  Chop into small cubes
  2. In saute pan, add small amount of oil and saute garlic, onion and bell pepper until slightly soft.
  3. Add in black beans, zucchini and cooked sweet potato cubes.
  4. Stir together with cumin and salt and cook until zucchini is at desired texture (I like mine lightly cooked).
  5. Top with desired toppings.
