To be honest, I do not love the flavor of sweet potatoes but they are a quality carb so I try to include easy sweet potato recipes. Katie, my assistant, tried out this recipe and said that it was tasty and easy. Have fun with adding your favorite toppings.
Ingredients:
- 2 large sweet potatoes, cooked and peeled
- unscented coconut oil, avocado oil or EVOO (for sauteing)
- 1 cup black beans, rinsed
- 1/2 onion, chopped
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 3 cloves garlic, minced
- Seasoning: cumin and sea salt
- Topping ideas: avocado chunks, sour cream or plain greek yogurt, chopped green onions, sriracha
Directions:
- Cook sweet potatoes separately (oven or microwave), then peel skin. Chop into small cubes
- In saute pan, add small amount of oil and saute garlic, onion and bell pepper until slightly soft.
- Add in black beans, zucchini and cooked sweet potato cubes.
- Stir together with cumin and salt and cook until zucchini is at desired texture (I like mine lightly cooked).
- Top with desired toppings.
