Taco Ingredients:
• ½ lb flounder
• Salt & pepper to taste
• 1 Tbsp oil (coconut, olive or grapeseed)
• 1 avocado
• 6 corn tortillas
• ¼ English cucumber
Directions:
Dice avocado and cucumber. Wash filets and season to taste. Heat oil in skillet on medium heat and cook fillets 3 to 4 minutes on each side then remove from heat. Heat tortillas covered in a separate skillet on low heat. Plate and serve. Serves approximately 6 small fish tacos
Fun Tip: Sautee one banana and top to fish tacos for a unique twist on traditional fish tacos!
Salsa Ingredients:
• 1 package cherry tomatoes
• ½ red onion
• 1 cup cilantro
• 1 bell pepper
• ½ jalapeno
• 1 tsp sea salt
• 1 tsp minced garlic
Directions:
Finely chop up all ingredients or add to food processor and blend ingredients to desired consistency.
