Spaghetti Squash Salad

1-2 Tbsp Olive oil
1 tsp Rosemary
1 Tbsp fresh minced garlic
Salt/pepper to preference
1/2 Cup baby kale greens or spinach
1 Tbsp dried cranberries, chopped (unsweetened or low sugar if possible)
1/4 cup chopped white onion
Note: May add chicken or pine nuts for additional protein

Directions:
Preheat the oven to 375 degrees. Arrange the squash in a large baking dish, cut-sides down. Pour 1/2 cup water into the dish and bake until tender-30-35 minutes. Rake with a fork to remove flesh in strands.
Toss strands of spaghetti squash with garlic, greens, olive oil, cranberries, onion, and salt/pepper. Lay on top of bed of greens and enjoy!

Note: This can also be enjoyed with an array of roasted vegetables of many types.
