• 1/2 cup Garbanzo bean, rinsed (if canned)
• 1/2 cup black beans, rinsed (if canned)
• 1/2 cup Cherry tomatoes
• 1/2 cup diced, seeded cucumber
• ½ cup Feta Cheese (from sheep milk, preferred)
• ¼ cup EVOO
• ½ cup Red wine vinegar
Tip: Make double portion so you will have extra for the Mediterranean wrap recipe.
Directions: Combine all ingredients and toss. Enjoy!
