Spicy Tofu Stir Fry with Mixed Veggies

Delicious and Simple!

Stir fries are so easy and tasty. Use sauce from Spiced Vegetable Pasta to marinate tofu or chicken (try to use organic).  You may know that I am not a huge soy fan but occasional organic tofu, tempeh or edamame is fine addition to your diet.

  • Approx 3 oz organic tofu, tempeh, or chicken
  • Stir fry vegetables (My favorites are snap peas, carrots, onions, broccoli and cauliflower)
  • 2 Tbs Toasted sesame oil
  • 2 Tbs GF tamari or soy sauce

Directions:

1. Preheat oven to 350 degrees. Bake marinated tofu until preferred crispness is attained.
2. Preheat stovetop pan and add fresh or frozen vegetables. Cook vegetables in sesame oil and tamari.
3. Toss all ingredients together and enjoy!

Serving size is approx. 3 oz of chicken or tofu and 1 cup + of veggies
