I usually make a batch of Steel Cut Oats every week. The whole family eats them up. Here is an easy basic starter recipe.
Ingredients:
- 1 cup steel cut oats
- 1/4 cup chia seeds
- 1/4 cup chopped nuts of choice
- 1 tsp cinnamon
- 3-4 cups water (for extra creaminess and calories, sub 1 can coconut milk for 2 cups water)
- For added sweetness, add 3-6 drops Stevia
Directions:
- In instant pot, stir oats, seeds, cinnamon and liquid.
- Lock lid. Cook on high pressure for 12 minutes.
- Allow steam vent to release. Remove lid and stir oatmeal. If your oatmeal is too thick, add more liquid.
A typical portion is 3/4 -1 cup cooked oatmeal. My favorite toppings are a handful of blueberries and extra walnuts and a drizzle of honey.
