Banana Nut Quinoa Hot Cereal

banana_nut_quinoa_cereal2This is a simple and yummy way to use up leftover quinoa in the morning.

In a small pot on the stove, add:

  • 1 cup of leftover cooked quinoa
  • ¼ cup almond or coconut milk (unsweetened is preferred)
  • ½ t vanilla extract
  • ½ banana (ripe) – mush it into the mixture
  • 1 t cinnamon
  • Stevia (as needed for extra sweeteness)
  • Top with 2 T chopped pecans (or other nut of choice)
