This is a simple and yummy way to use up leftover quinoa in the morning.
In a small pot on the stove, add:
- 1 cup of leftover cooked quinoa
- ¼ cup almond or coconut milk (unsweetened is preferred)
- ½ t vanilla extract
- ½ banana (ripe) – mush it into the mixture
- 1 t cinnamon
- Stevia (as needed for extra sweeteness)
- Top with 2 T chopped pecans (or other nut of choice)
