Avocados are so nutritious and can be used in many different ways. One great recipe is a baked avocado. It is simple and easy to whip up for breakfast or lunch.
Ingredients
- 1 avocado
- 2 eggs
- dash of salt and pepper
- herbs of your choice
Instructions
Preheat the oven at 425. Cut the avocado in half, remove the pit, and scoop out 2 Tbsp of flesh from the center to make room for the eggs. Crack open an egg in each avocado half . Put the avocados filled with the eggs into the oven for 15-30 minutes (keep an eye on it). Once they are ready, pull them out of the oven. Sprinkle the salt, pepper and with herbs of your choice. I love chives or hot sauce on mine!
