Delicious Hot Cocoa (non-dairy, lower sugar)

One of my favorite drinks as a kid was hot chocolate with marshmallows.  Now, I wanted to figure out a way to make a much healthier, yet still delicious hot chocolate that could satisfy the kid in me! Here is a recipe I whipped up that I know you will love. (This recipe serves one person.)


  • 2 tablespoons dark chocolate chips
  • 1 cup almond milk
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon vanilla OR peppermint extract
  • tsp cinnamon
  • Pinch salt


  • Using a microwave-safe mug, pour in the milk and heat on high for about 1 minutes 30 seconds
  • Add dark chocolate chips, coconut sugar, extract, cinnamon, and pinch salt. Stir until chocolate has completely melted
  • If desired, top with whipped cream (using a whisk, beat coconut cream until its a whipped cream consistency) and/or marshmellows
