Betsy’s Fudge Fat Bombs

I am not a Keto girl, but I am in favor of utilizing healthy fats to curb cravings.  The original Keto recipe I tried was too oily for me so I experimented and created more balance.  These fat bombs truly help satisfy and cut cravings.  One will do the job!   My kids love them too.  Instead of a sugar high, my kids are more calm after eating these.

Note: Need silicone mold.  For this recipe, I use two molds with 15 cylinder cups that are approximately 1.5 inches in diameter.

Ingredients:

  • 1 cup nut butter (almond, sunflower seed, or peanut butter)
  • 3/4 cup coconut oil (pure, extra virgin or organic)
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup coconut flour
  • 1/4 cup dark chocolate chips (optional)
  • Sweetener: 1/4 tsp powdered stevia OR 1-2 Tbsp monk fruit sweetener
  • Sprinkle of sea salt
  • 1/2 cup chopped walnut pieces (optional)

Directions:

  1. In a small pot over medium heat, combine and melt nut butter and oil.
  2. In that same pot, add in the rest of the ingredients (except walnuts).  Stir until creamy.
  3. Allow mixture to cool slightly so you can taste test sweetness.  Add more sweetener if needed.
  4. Pour mixture evenly into molds.  If desired, add walnut pieces evenly into molds for added crunch.
  5. Put molds in the freezer.  Once solidified, pop out of mold and store in zip lock bag or Tupperware in freezer.
