Taco Rice

If you and your family like tacos, then you’ll love this dish.  With only 4 staple ingredients, it is the easiest recipe to make.

Staple Ingredients:taco rice

  • 3 cups cooked brown rice
  • 1 package  taco seasoning mix (low sodium preferred)
  • 1 can (15 oz) black or kidney beans, drained
  • 1 can (15 oz) diced tomatoes (low sodium preferred)

Optional ingredients:

  • 1 cup corn kernels
  • 1/2 cup fresh cilantro, chopped
  • 1 cup shredded lettuce
  • 1 avocado, sliced
  • hot sauce

Directions:  In a pot, add in the staple ingredients (rice, seasoning, beans, and diced tomatoes).  Stir over medium heat until mixed thoroughly and heated to desired temperature.  If desired, add in corn kernels and hot sauce for an extra kick.  After heating, add cilantro if desired.  For a true taco rice, top rice dish with shredded lettuce and avocado slices.
