There is no comparison to fresh salsa. In the summer, I make it weekly from garden veggies and we eat it with everything.
- 2-3 large ripe tomatoes, diced
- 1 large onion, diced
- 1/2-1 jalapeno pepper, diced finely (maybe start with half and test spiciness)
- 1/2 cup fresh cilantro, chopped
- Fresh lime juice from 1 juicy lime
- Salt to taste
- Optional: I like to add 1 cup black beans and 1 cup corn to bulk up the mixture and add some sweetness.
Directions: Mix all ingredients in a bowl or large tupperware container and store in refrigerator. Makes MANY servings but it will taste so good that you will eat it all up.
