- 1 1/2 cups uncooked quinoa
- 1 red, yellow, and orange pepper, diced
- 1/4 cup olive oil
- 1/2 diced cucumber (unpeeled for added nutrients)
- 1 fresh jalapeno, seeded and minced
- 1/2 cup seeded and diced tomato
- 1/2 cup sliced green onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/2 cup pine nuts
- Juice, freshly squeezed from 1 lime and 2 lemons
Cook quinoa according to package directions and let cool. Mix together quinoa with remaining ingredients. Chill in fridge and serve cool. Yields 8 servings.
