Lemony Quinoa with Vegetables

  • lemony quinoa  1 1/2 cups uncooked quinoa
  •   1 red, yellow, and orange pepper, diced
  •   1/4 cup olive oil
  •   1/2 diced cucumber (unpeeled for added nutrients)
  •   1 fresh jalapeno, seeded and minced
  •   1/2 cup seeded and diced tomato
  •   1/2 cup sliced green onions
  •   1/4 cup chopped fresh cilantro
  •   1/4 cup chopped fresh mint
  •   1/2 cup pine nuts
  •   Juice, freshly squeezed from 1 lime and 2 lemons

Cook quinoa according to package directions and let cool. Mix together quinoa with remaining ingredients. Chill in fridge and serve cool. Yields 8 servings.
