Carrot Cake Overnight Oats


Many of you are addicted to my easy overnight oats recipe so I thought I’d offer you a different flavor.  Enjoy!

Prep Time: 5-10 mins
Soak Time: Overnight
Serves: 2-3


  • 1 cup gluten free old fashioned oats
  • 1 cup of milk (unsweetened almond & coconut milk are my favorites)
  • 1 large carrot, peeled and grated (use blender if preferred)
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1/2 tsp nutmeg
  • 1 banana, mashed
  • 1/4 cup chopped walnuts or pecans
  • Optional: add chia seeds, hempseeds or flax meal for more protein, healthy fat and fiber


Mix all ingredients together in an airtight container and store in the fridge overnight.
