Crockpot Lentil Sausage Spinach Soup

I am obsessed about the crockpot recently.  Sometimes I am just too exhausted to cook a full meal – I am sure you can relate.  This crockpot recipe is a spin on my Hearty Lentil Soup but even easier.

Ingredients:IMG_0495 (1)

  • 1/2 pound dried lentils
  • 8 oz ground sausage (pork, turkey or chicken)
  • 14 oz bag of frozen mixed bell pepper strips
  • 12 oz bag of frozen sliced carrots
  • 6-8 oz of frozen chopped spinach
  • 6-8 oz of frozen chopped onions
  • 3-4 stalks of celery, chopped
  • 2 cans of diced tomatoes
  • 4 cups of organic vegetable broth
  • Seasonings: 1 tsp curry powder, 1 tsp garlic powder, salt and pepper as desired

Directions:  Add all ingredients to crockpot.  Cook on high heat for 4-6 hours or low heat for 8-10 hours.  Stir near the end to help break apart the sausage.
