I made these for my family and they were gone in a few minutes! They are a great protein option for dinner or snacks.
Ingredients:
- Approximately 8 chicken tenderloins – rinsed and chopped into bite size pieces
- 1/2 cup bread crumbs (gluten free or whole wheat)
- 1/2 cup almond meal (ground almonds – sold at Trader Joes or the health food store)
- 1/4 cup flax meal
- 1 tsp dried oregano
- 1/2 tsp garlic pepper
- 1/2 tsp sea salt
- sprinkle of hot pepper flakes
- 1 Tbsp coconut oil (I prefer this oil b/c of it’s stability to high temperatures)
Directions:
- Place all ingredients except the oil in a large zip lock bag. Shake it thoroughly until the chicken is coated evenly with all the dry ingredients.
- Heat the coconut oil in a large pan. When the oil is hot, sautee the breaded chicken bites on medium-high until insides are cooked through and the breading is browning (approximately 10 minutes).
