Crockpot Bean Recipes

beansIn this newsletter, I am going to teach you how to make a large pot of beans and utilize them in 3 easy family dinner recipes that are nutritious and super affordable. Some people look at me like I am crazy when I suggest they make their own beans. Soaking and cooking beans from scratch takes a little prep time, but it’s well worth it when you are able to eliminate their gassy effect and have dinner options for most of the week.

COOKING DRIED BEANS:
(We are using 2 x 1 lb bags of dried beans for our recipes below = 12 cups cooked beans)
#1. SOAK Place dried beans (2 x 1 lb bags) in a large bowl and add enough filtered water to cover beans by a few inches. Soak beans for 6-12 hrs (overnight is plenty of time). After the soaking period, rinse them off thoroughly. This process reduces the gaseous effect by at least 60%.

#2. COOK You can cook beans in a crock pot or on the stove. Remember that the directions below are based on 2 x 16 oz (1 lb) bags of dried beans. It’s smart to check on them from time to time to make sure you have enough water and they are not overcooking. Beans are done when they can be easily mashed by your fingers.

COOKING METHODS
Crock Pot: Transfer soaked beans to a crock pot. Add enough filtered water to cover beans by approximately 1-2 inches. Cook on low for approximately 3-5 hours. Drain extra fluid after cooking if needed. Optional: add 3 cloves of garlic and 1 tsp of pepper during the cooking process. Do not add salt until the beans are cooked completely. Salt will prevent the beans from absorbing water when cooking.

Stovetop: Transfer soaked beans to a large pot with a lid on the stove. Add enough filtered water to cover beans by approximately 1-2 inches. Cook on low to medium heat and simmer for approximately 2-3 hours. Drain extra fluid after cooking if needed. Optional: add 3 cloves of garlic and 1 tsp of pepper during the cooking process. Do not add salt until the beans are cooked completely. Salt will prevent the beans from absorbing water when cooking.
