This meal requires a fair amount of chopping but otherwise it is simple. With all the raw vegetables, it is truly clean eating. It’s a fun dish for families and small get togethers.
Thai Buffet Ingredients for 4 adults (all ingredients are optional depending on your preferences):
- 1 cucumber, chopped into thin little strips
- 1 red bell pepper, chopped into thin little strips
- carrots, 1 cup shredded (I bought a bag of pre-cut carrots)
- 1 cup broccoli slaw (I bought a bag of shredded broccoli/cabbage)
- 3 green onions, chopped finely
- cliantro, 1/4 cup chopped
- pineapple, 1-2 cups finely chopped (I made my own pineapple salsa but pineapple bits works fine.)
- 2 large chicken breasts, chopped in small cubes (I topped the chopped chicken with a little soy sauce for more flavor)
- brown rice, 1 cup cooked (I skipped this ingredient for my buffet to keep it lighter)
- 2 heads of lettuce (bib lettuce is best, but romaine and iceberg work well too)
Peanut Sauce (Stir these ingredients together until creamy):
- 1/2 cup natural peanut butter (creamy or chunky – I like chunky peanut sauce)
- 1/4 cup coconut milk (canned or unsweetened carton coconut milk will work)
- 3 Tbsp soy sauce (I use low-sodium soy sauce)
- 3 Tbsp lime juice (fresh squeezed lime tastes better)
- 2 Tbsp agave nectar
- 1 Tbsp rice vinegar
- 1 tsp ginger (fresh minced ginger tastes best but you can use powdered ginger)
