I love egg rolls but the fried shell makes me feel bloated. This recipes is quite similar to the egg roll base. Of course, I have jazzed up this recipe adding more veggies but also making it super simple.
Stir-Fry Ingredients:
- 1 bag cole slaw mix with carrots (~14 oz bag)
- 2-3 cloves garlic, minced
- 1 Tbsp grated ginger, grated
- 1/2 -1 lb lean ground beef
- Pinch of salt and pepper
- 3-4 green onions, chopped
- Sesame seeds
Sauce Ingredients:
- 3 Tbsp soy sauce (or tamari or coconut amino acids)
- 2 Tbsp toasted sesame oil
- 1/2 – 1 Tbsp sriracha (to your desired heat)
- 1 Tbsp honey

Prepare the stir-fry sauce first. Mix sauce ingredients in a small bowl and set aside.

Heat a large skillet over medium heat. Once hot, add a neutral cooking oil (unscented coconut oil, avocado oil or olive oil). Saute ground beef, garlic, ginger, and a pinch of salt and pepper. Cook the beef until browned (about five minutes).
- Now add the cole slaw mix and cook until the cabbage is slightly wilted (or fully wilted, if you prefer).
- Stir in the prepared sauce and the green onions. Optional: Top with a sprinkle of sesame seeds.
- Serve by itself or serve over brown rice, quinoa (for a balanced meal).
