Tons of recipes call for zucchini noodles or zoodles. I’ve tried them out with my family and they rejected them – darn it! But I did not want to give up on them because they are so easy and healthy.
Here is my resolution…Mix 1/2 zucchini noodles + 1/2 spaghetti (I use gluten free pasta). You still have to monitor your carbs and portion of pasta but you can have a bigger total portion and it tastes great. No more complaints from my family!
Realistic Zucchini Noodle Blend:
- Cook 1/2 – 1 box of Gluten Free or regular spaghetti according to directions on the box. If using GF, make sure to rinse the pasta well afterwards.
- Use zucchini spiralizer and make a similar portion of zucchini noodles. For a 1/2 box of spaghetti, I usually spiralize 1 large zucchini.
- Mix the warm pasta with the fresh zucchini noodles. Add a few Tbsp of olive oil and some garlic salt as desired. Toss well and
