Veggie and Avocado Tostada

Ever stuck for dinner, this is a simple recipe to whip up in minutes.  Tostada

Ingredients:

  • 1-2 Corn Tortillas (buy organic if possible)
  • 1/2 avocado, chopped
  • Your favorite chopped veggies: Chopped tomatoes, red or green onions, peppers, carrots, lettuce, cabbage or cilantro
  • Optional: Top with some beans, shredded chicken, ground meat or cheese if desired
  • Optional: I like to top with a dollop of plain Greek yogurt and hot sauce as well

Directions: Toast the corn tortillas.  Top with all your favorite ingredients.
