Ever stuck for dinner, this is a simple recipe to whip up in minutes.
Ingredients:
- 1-2 Corn Tortillas (buy organic if possible)
- 1/2 avocado, chopped
- Your favorite chopped veggies: Chopped tomatoes, red or green onions, peppers, carrots, lettuce, cabbage or cilantro
- Optional: Top with some beans, shredded chicken, ground meat or cheese if desired
- Optional: I like to top with a dollop of plain Greek yogurt and hot sauce as well
Directions: Toast the corn tortillas. Top with all your favorite ingredients.
