Split Pea and Ham Soup (Pressure Cooker)

I made this for my family and they all had 2-3 servings!

Split Pea, Ham and Veggie Soup

Ingredients:

  • 1 bag of dried split peas (1 lb/16 oz)
  • 8-16 oz of ham, chopped into small cubes
  • 2 large carrots, thinly sliced
  • 2 stalks of celery, thinly sliced
  • 1 medium onion, diced
  • 1 Tbsp minced garlic
  • 2 medium potatoes, chopped into cubes
  • 6-8 cups vegetable or chicken stock

Directions:

  • On saute setting, add a little oil with garlic, onions, carrots and celery. Saute for 5 minutes. Add ham and cook for 5 more minutes.
  • Rinse the dried split peas and add them to the pot with the potatoes and 6 cups of stock. Set Instant Pot at high pressure for 20 minutes. If soup mixture is too thick, add more stock. Most likely, it will thicken as it cools overnight. Feel free to add the extra stock or water later.
