Edamame is naturally a balanced snack with carbs, protein, fiber and healthy fat. In general, try to buy organic soy products to avoid GMO (genetically modified organisms).
Ingredients:
• 1lb frozen edamame
• 1 clove garlic, minced
• ½ Tbsp rice vinegar
• 1 Tbsp soy sauce (use GF tamari sauce if preferred)
• 2 tsp toasted sesame oil
• Crushed red pepper flakes for spice
• Sea Salt
Directions:
1. Cook 1 pound frozen edamame (beans only) in boiling water until tender, 5 minutes; drain.
2. In a bowl, toss cooked beans with rest of ingredients.
3. One serving is approximately 1 cup. Save rest of the batch for salads, Thai dishes and quick wraps.
Servings: Approximately 4-6 servings.
