This is my go-to healthy salad and it literally takes me 2 minutes to put together. First it’s important to note:
- Prep Ahead! I always encourage my clients to prep some staples. For this recipe, it is helpful to make a batch of my Basic Salad Dressing and a pot of quinoa. For quick quinoa, use a rice cooker. Here are some more quinoa recipes if you are interested.
Ingredients (1 serving of salad):
- Large handful of greens (I prefer pre-washed organic mixed greens, arugula or spinach)
- 1/3 – 1/2 cup cooked quinoa
- 1/4 cup roasted sunflower seeds
- 1/2 avocado, diced
- Few Tablespoons of my All Purpose Salad Dressing
- Optional Ingredients: To jazz up your salad, add more veggies like diced tomatoes, cucumbers, or red onions. A sprinkle of feta or goat cheese is always a yummy topping. And feel free to experiment with different nuts and seeds.
