Roasted Veggie Salad with Goat Cheese and Pumpkin Seeds

roasted veggie saladThis is one of my favorite healthy salads and I added my basic homemade salad dressing.

Ingredients:
• Greens of your choice.  I like mixed greens with some added arugula.  The bitter arugula taste mixes well with the sweet roasted veggies.
• Top with roasted veggies (1 serving is approximately 1 cup cooked veggies).  If desired, reheat the veggies.
• Sprinkle on goat cheese, about 1 oz
• Sprinkle on pumpkin seeds or sunflower seeds, small handful

Dressing (Batch of Balsamic Vinaigrette):
• ¾ cup olive oil
• ¼ cup balsamic vinegar
• Drizzle of agave or honey
• 1 T spicy mustard
• Sprinkle in garlic powder, salt, and pepper
• Shake well in a sealed container.  Can last for weeks in the frig.
