Roasted Red Pepper Strips

If red peppers are on sale, I usually buy 6 peppers to make RRP (roasted red pepper strips). So simple… just slice into strips, toss with olive oil, garlic and salt and cook. That’s it. When done, they are like candy.I like to make a big batch and use them in a variety of dishes:

  • Serve as an appetizer (RRP + goat cheese on rice crackers)
  • Add to pasta and rice dishes
  • Add to mini meatloaves
  • Serve on chicken breast with spinach and feta
  • Add to egg cups
  • Add to soups for natural sweetness

Ingredients: Approximately 6 red peppers, 1 large onion (optional), 1 heaping Tbsp minced garlic, olive oil, sea salt

Directions:

  1. Preheat oven to 400.
  2. On a large sheet pan, line it with tin foil or parchment paper.
  3. Slice peppers and onion thinly, approximately 1/2 inch wide – throw on pan.
  4. Toss pepper with minced garlic, olive oil (enough to lightly coat peppers) and salt.
  5. Cook for 20 minutes. Toss peppers. Cook for 15-20 more minutes (until peppers are soft).
