Roasted Garlic and Lemon Hummus

UnknownOut of all the dips in the world I think a good flavorful hummus is my favorite. Hummus can be flavored many different ways and today I’m sharing one of the best.

  • 2 cans organic garbanzo beans drained and rinsed (or made from dried beans)
  • 2 heads fresh garlic
  • the juice and zest of 5 meyer lemons
  • olive oil
  • 1 tbsp. ground cumin
  • sea salt and pepper
  • 1 cup organic sesame tahini

Place heads of garlic in foil and drizzle with olive oil, wrap tightly and place in 350 degree oven for 1 hour. This can be done ahead of time if desired.  The garlic should be soft enough to squeeze out. Place all of the ingredients except olive oil in food processor and turn on, pour in olive oil as it is blending until you reach desired consistency.  Adjust with salt and pepper and enjoy with anything that dips!!
