Quinoa Tabouli

quinoa tabouliYou can eat this flavorful Greek quinoa dish as a salad or as a sandwich spread with hummus as well.  When making this salad into a complete meal, add 2 Tbsp of seeds (per serving) for better balance.  I prefer sunflower seeds or hempseeds.  FYI – Fresh herbs are the key to tasty tabouli.

  • 1.5 cups quinoa
  • 1 tsp. sea salt
  • 1/3 cup olive oil
  • 3/4 cup lemon juice
  • 2 tbs. garlic, chopped
  • 1/2 tsp. black pepper
  • 2 cups fresh diced tomatoes
  • 1.5 cups fresh parsley
  • 1 cup green onions
  • 1/2 cup fresh mint leaves, chopped
  • Optional: 1/3 cup diced tomatoes and 1/3 cup diced cucumbers

1. Cook quinoa as directed by the package.  I use a rice cooker.
2. Whisk together oil, lemon juice, garlic, salt, pepper.
3. Stir quinoa together with parsley, mint, onions, and diced tomatoes. Eat at room temperature and store in refrigerator.
Makes approx. 3 servings.
