Orange Rice and Black Bean Salad
This unique salad contains lots of fiber, protein and vitamin C, and it’s gluten/soy/dairy free. I think it would be a great way to add some pizzazz to leftover brown rice!
- ½ cup canned or cooked black beans, drained
- ¾ cup cooked brown or wild rice
- ½ cup finely chopped celery (about 1 stalk)
- ½ cup peeled and sliced orange (1 small or ½ large)
- 1 scallion, thinly sliced (about ¼ cup)
- 1 tbsp chopped fresh cilantro
- Sea Salt & pepper
Dressing:
- ¼ cup orange juice
- 1 tbsp cider or balsamic vinegar
- ½ tsp olive oil
- ½ tsp ground cinnamon
In a medium bowl, combine the beans, rice, celery, orange, scallion and cilantro. In a separate bowl, combine the orange juice, vinegar, oil, and cinnamon. Pour the dressing over the salad and stir thoroughly. Season with salt and pepper.
