Orange Rice and Bean Salad

This unique salad contains lots of fiber, protein and vitamin C, and it’s gluten/soy/dairy free. I think it would be a great way to add some pizzazz to leftover brown rice!

  • ½ cup canned or cooked black beans, drained
  • ¾ cup cooked brown or wild rice
  • ½ cup finely chopped celery (about 1 stalk)
  • ½ cup peeled and sliced orange (1 small or ½ large)
  • 1 scallion, thinly sliced (about ¼ cup)
  • 1 tbsp chopped fresh cilantro
  • Sea Salt & pepper

Dressing:

  • ¼ cup orange juice
  • 1 tbsp cider or balsamic vinegar
  • ½ tsp olive oil
  • ½ tsp ground cinnamon

In a medium bowl, combine the beans, rice, celery, orange, scallion and cilantro. In a separate bowl, combine the orange juice, vinegar, oil, and cinnamon. Pour the dressing over the salad and stir thoroughly. Season with salt and pepper.
