Fajitas: Steak, Chicken or Vegetarian

Fajitas are a pretty healthy meal but I like to make a few improvements.  First of all, corn tortillas are much better for you than flour so try that.  Skip or cut down on the unhealthy dairy (cheese and sour cream) and add extra avocado.  And go crazy on the veggies – add extra peppers and onions and other favorites, like mushrooms and squash.

Ingredients

Fajitas

  • Beans, Shrimp, Steak or Chicken (approx. 1 pound)
  • 1-2 red onion, thinly sliced
  • 1 green pepper, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • Other veggies of choice
  • Corn tortillas
  • 3 tbsp of olive oil or unscented coconut oil
  • Fajita seasoning (if not using packet)
    • tablespoon chili powder
    • 1 teaspoon cumin
    • 1 teaspoon paprika
    • 1/4 teaspoon cayenne pepper
    • 1/4 teaspoon garlic powder
    • 1 teaspoon salt
    • 1 teaspoon ground black pepper
  • Fun Toppings
    • 3 T chopped fresh cilantro leaves
    • 1 avocado, sliced
    • lime wedges to garnish
    • Hot sauce or salsa as desire

Directions

  1. In one medium sized pan, heat 1 tbsp of oil into pan. Add protein and sprinkle with 3/4 of fajita seasoning. Mix together and cook well.
  2. In another pan, heat the rest of the oil. Add the veggies and top with the remaining fajita seasoning and cook until the veggies are slightly wilted.
  3. Serve the fajitas in the corn tortillas and garnish with the toppings.
