This is a super easy and colorful salad. Enjoy!
- 1½ pounds green beans, trimmed
- 1¼ pounds cherry tomatoes, quartered
- 1 teaspoon dried oregano
- 1 Tablespoon red onion, minced
- 2 Tablespoons red wine vinegar
- 1 Tablespoon olive oil
- ½ teaspoon sea salt
- ¼ teaspoon fresh ground pepper
- Cook beans in boiling water for 7 minutes or until tender.Drain and rinse under cool water.
- Place beans, tomatoes and oregano in a large bowl. Toss gently to combine.
- In a separate small bowl with a whisk, combine red onion and vinegar.Whisk in olive oil, salt, pepper until blended.
- Pour vinaigrette over salad and toss to combine.
