Green Bean Tomato Salad

This is a super easy and colorful salad.  Enjoy!images

  • 1½ pounds green beans, trimmed
  • 1¼ pounds cherry tomatoes, quartered
  • 1 teaspoon dried oregano
  • 1 Tablespoon red onion, minced
  • 2 Tablespoons red wine vinegar
  • 1 Tablespoon olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground pepper
  1. Cook beans in boiling water for 7 minutes or until tender.Drain and rinse under cool water.
  2. Place beans, tomatoes and oregano in a large bowl. Toss gently to combine.
  3. In a separate small bowl with a whisk, combine red onion and vinegar.Whisk in olive oil, salt, pepper until blended.
  4. Pour vinaigrette over salad and toss to combine.
