Easy Lettuce Wrap Snacks

Lettuce wraps are an easy and healthy way to make a balanced snack.  So many options too!  Here are some fun ideas to get you started.

My favorite lettuce wrap contains hummus, sunflower seeds, avocado slices, roasted red pepper, cucumber slices and shredded carrots.

There are so many combinations.  Just start with a big lettuce leaf and top with something from each food group:

  • Carbohydrates: Hummus is the the perfect spread.
  • Protein: Shredded chicken, tuna/chicken/egg salad, seeds
  • Healthy Fat: Avocado slices, pesto
  • Veggies (the more the merrier): Shredded carrots, cucumber slices, bell pepper, tomato, onion, cole slaw mix, roasted red peppers

If you desire more carbs (energy), feel free to add my favorite crackers.
