Crock Pot Chicken

imagesThe main crock pot recipe I have enjoyed over the years is one that I have grown up with since child hood.  It’s probably the easiest and cheapest way to have a delicious hot meal waiting for you when you get home at the end of the day and it practically cooks itself.  In your large crock pot, add:

  • 1 whole organic chicken
  • 2 stalks chopped celery
  • 1 chopped yellow onion
  • 3 chopped carrots
  • 1 chopped russet potato
  • 5 cloves of garlic
  • 1 bunch minced parsley
  • 1 teaspoon crushed red pepper
  • 1 teaspoon minced rosemary
  • the juice of one lemon
  •  sea salt and pepper

Cover ingredients with organic chicken broth or if you don’t have that, you can use fresh water. This should take most of the day in the crockpot.  Turn the crockpot on low, put the lid on and return 6-8 hours later for a hot meal, just pull the chicken out and tear  or cut sections apart ( it should come apart pretty easy) and place in a bowl.  Spoon some of the remaining liquid and veggies over chicken and serve with a big hunk of crusty bread and green salad.
