Cranberry Relish

Cranberry relishThis is a great alternative to canned cranberry relish at Thanksgiving.

  • 1 (12 oz) package fresh cranberries, rinsed and drained
  • 1 large unpeeled orange, cut into eighths and seeded
  • 1 large granny smith apple, cut into eights and cored
  • 1/2 cup walnuts
  • 1/2 to 3/4 cup sugar, to taste

Place cranberries in the bowl of a large food processor and pulse until coarsely chopped. Pour into large mixing bowl. Repeat this process with the unpeeled orange and unpeeled apple, chopping each coarsely and add to the mixing bowl.  Place the walnuts in the processor and pulse until finely chopped.  Add to cranberry mixture. Stir in sugar.  Cover and chill until ready to serve.
