Cowboy Caviar

Cowboy Caviar is a form of bean salsa.  It’s naturally a healthy dip with all the beans, raw veggies, and fresh herbs.  Serve it with corn chips and it’s a party favorite or add lettuce and avocado for a hearty salad.

Ingredients:Cowboy Caviar

  • 1/2 cup extra virgin olive oil
  • 1/2 cup apple cider vinegar
  • 10 drops of Stevia (or you can use 1/4 cup of sugar or skip the sweetness)
  • 3 types of beans (3 cans, drained and rinsed or use dried beans and make your own)
  • 10 oz bag of frozen corn, defrosted (use organic)
  • 3 stalks of celery, finely chopped
  • 1 red onion or 1 bunch green onions, finely chopped
  • 2 Roma tomatoes, chopped
  • 1/2 cup chopped fresh cilantro
  • Salt and Pepper as needed
  • Hot Sauce, add for desired spiciness
  • Optional: Add chopped avocado.  Some people like chopped red bell pepper instead of tomatoes.

Stir the wet ingredients first (oil, vinegar, and stevia).  Add all other ingredients and stir well.  Store in refrigerator – flavors tastes better each day.
