Chowders usually have a lot of milk or cream but this easy recipe is plenty creamy without the dairy.
- 2 bags frozen corn (20 oz, buy organic)
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 3 small/medium potatoes, 1/2 inch cubes
- 1 medium onion, chopped
- 1 can coconut milk
- 2 cups vegetable broth
- Sea salt
- Coconut or olive oil
- Optional: Old bay seasoning (I love the taste of Old Bay in this soup)
Sauté onion in oil for 5 min until golden brown. Add chopped carrots, celery and potatoes and cook for another few minutes. Add coconut milk, broth, salt and seasonings. Simmer on medium-low for 20 minutes or until vegetables are tender. Serves approximately 8.
