Corn Chowder (Dairy Free)

Chowders usually have a lot of milk or cream but this easy recipe is plenty creamy without the dairy.

  • 2 bags frozen corn (20 oz, buy organic)cornchowder
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 small/medium potatoes, 1/2 inch cubes
  • 1 medium onion, chopped
  • 1 can coconut milk
  • 2 cups vegetable broth
  • Sea salt
  • Coconut or olive oil
  • Optional: Old bay seasoning (I love the taste of Old Bay in this soup)

Sauté onion in oil for 5 min until golden brown. Add chopped carrots, celery and potatoes and cook for another few minutes. Add coconut milk, broth, salt and seasonings. Simmer on medium-low for 20 minutes or until vegetables are tender.  Serves approximately 8.
