Need to make a dessert, but don’t like all the overly sweet, gluten-laden options out there? Have no fear, this pudding, packed with healthy fats and some quality protein, is sweet and delicious without all the refined sugar and gluten.
Ingredients: (Serves 3, easily doubled or tripled)
- 1 ripe avocado
- 1 small banana
- 3-4 Tbsp unsweetened dark cocoa powder
- 1/2 cup crunchy natural peanut (or other nut) butter
- 1/4 cup unsweetened almond milk
- A few drops stevia to taste
Directions:
- Place your avocado, banana, cocoa, peanut butter, and half the almond milk into a food processor or blender. Blend until creamy.
- Continue to add almond milk and blend until desired pudding consistency is reached.
- Add stevia (and more cocoa powder if needed) to taste.
- Divide into 3 small servings. Cover in plastic wrap and chill for a few hours or overnight.
- Best eaten fresh, will stay up to 2 days.
