Chicken Stir Fry with Kale and Roasted Tomatoes

IMG_2660Fastest stir-fry ever.  I usually make chicken (Sundried Tomato Chicken Bake) and rice in bulk in the beginning of the week.  It helps speed up this simple healthy stir-fry.

Ingredients:

  • Approximately 2 large breasts, cooked and sliced
  • 1 head of kale, ribbing removed and chopped
  • small container of grape tomatoes
  • Olive oil or unscented coconut oil to coat the pan
  • 2 bulbs of garlic, minced
  • Sea salt and pepper to taste

Directions:

  1. In a medium saucepan, coat the pan with oil and heat to medium/high.
  2. Add chopped kale, tomatoes and minced garlic.  Cook for approximately 5-10 minutes.
  3. Add chicken chunks and cook until hot.  Add salt and pepper to taste.

Makes approximately 3-4 servings.  Serve with a side of brown rice to balance the meal better.
