Fastest stir-fry ever. I usually make chicken (Sundried Tomato Chicken Bake) and rice in bulk in the beginning of the week. It helps speed up this simple healthy stir-fry.
Ingredients:
- Approximately 2 large breasts, cooked and sliced
- 1 head of kale, ribbing removed and chopped
- small container of grape tomatoes
- Olive oil or unscented coconut oil to coat the pan
- 2 bulbs of garlic, minced
- Sea salt and pepper to taste
Directions:
- In a medium saucepan, coat the pan with oil and heat to medium/high.
- Add chopped kale, tomatoes and minced garlic. Cook for approximately 5-10 minutes.
- Add chicken chunks and cook until hot. Add salt and pepper to taste.
Makes approximately 3-4 servings. Serve with a side of brown rice to balance the meal better.
