These muffins are yummy!!!! And the best part is that there is minimal sugar added.
- 2 cups nut meal/flour (I used 1 cup almond meal and 1 cup walnut meal)
- 2 tsp baking soda
- 1/2 tsp sea salt
- 1 T cinnamon
- 1 cup shredded coconut
- 3 large eggs
- 3 ripe bananas, mashed
- 1/2 cup real butter, softened
- 2 T raw honey or agave nectar
- 1 tsp apple cider vinegar
- 2 medium carrots, shredded
- 1 cup chopped walnuts or pecans
Preheat oven to 325. Lightly oil a 12 cup muffin tin. In a large bowl, mix together all the dry ingredients. In another bowl, mix together the eggs, bananas, butter, honey/nectar, and vinegar. Stir the wet ingredients into the dry ones and fold in the carrots and walnuts. Divide the batter evenly among the muffin cups. Bake for 40 min and until golden brown. Since there is no actual flour, the muffins will only rise slightly. Cool on a wire rack.
