Zucchini Egg Latka

Sometimes I want to make something fun and different for my family. Here is an easy recipe you can make for any meal of the day!  It’s actually well balanced with protein, carbs, healthy fat and veggie.  This recipe is versatile so feel free to add shredded potato or sweet potato for more carbs/fuel.


  • 1 cup shredded zucchini
  • 4 eggs
  • ¼ cup almond flour
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil


  1. Shred zucchini using the large holes of a cheese grater. Squeeze out excess moisture using a cheese cloth or paper towel.
  2. In a bowl, combine zucchini, almond flour, eggs, and garlic powder and stir. Heat oil in a skillet over medium heat.  Drop batter in by the spoonful and cook each side until golden brown, about 3 to 4 minutes per side.
