Pumpkin Pancakes (without flour)

This whole food based recipe comes from the Paleo Diet.  I tried it out with my family and we all loved it.

Ingredients:Pumpkin Pancakes

  • 4 large eggs, whites only
  • 1 cup canned pumpkin
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/4 cup unsweetened coconut milk
  • 1 tsp vanilla extract
  • 1/2 tsp allspice
  • 1 tsp cinnamon
  • Optional: I added a little stevia to mine for a sweeter taste.  I also topped our pancakes with some shredded coconut and agave syrup.
