This whole food based recipe comes from the Paleo Diet. I tried it out with my family and we all loved it.
- 4 large eggs, whites only
- 1 cup canned pumpkin
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/4 cup unsweetened coconut milk
- 1 tsp vanilla extract
- 1/2 tsp allspice
- 1 tsp cinnamon
- Optional: I added a little stevia to mine for a sweeter taste. I also topped our pancakes with some shredded coconut and agave syrup.
