Try these 10 minute bars for a wonderful snack or breakfast on the go, filled with fiber and healthy fats for adults and children alike!
Ingredients:
- 1 cup Gluten Free Cereal of choice (I use something high in fiber, low in sugar)
- 1/4 cup raw pumpkin seeds
- 2 Tbsp hemp seeds
- 2 Tbsp flax seeds
- 1/4 cup chocolate chips
- 2 Tbsp dried cranberries
- 1 tsp cinnamon
For the “glue”:
- 1-2 cups gluten free marshmallows (I know they have some chemicals but 1 cup for a whole batch is not much and they usually do not contain gluten.)
- 1-2 teaspoons of coconut oil
Directions:
1. Toss dry ingredients in a large bowl and set aside. Melt approximately 1-2 cups of marshmallows with 1-2 teaspoons of coconut oil over the stove until completely melted. When melted, toss with dry ingredients until thoroughly combined. Lay flat on parchment paper and refrigerate 1-2 hours. Cut into your preferred serving size squares! Do not need to be refrigerated 24/7. Enjoy!
