Easiest healthiest egg scramble

egg scrambleThis is the perfect breakfast to start out your day with protein, veggies, complex carbs and healthy fat. All you need is one pan and 5 minutes.

Ingredients (1 serving):

  • 2 eggs
  • unscented coconut oil or olive oil
  • large handful of raw spinach and/or other veggies (I love onions, peppers, and mushrooms)
  • 1/3 cup canned/cooked beans (I prefer black beans)
  • Optional Toppings: 1/2 avocado, hot sauce, salsa, diced tomatoes, fresh basil, cheese

Directions: Heat a little oil in a pan (medium high).  Add veggies, then eggs and beans.  Stir with a spatula until you have scrambled eggs.  Add your favorite toppings.
