Cinnamon Nut Yam

Yams might not be your typical breakfast, but I tried this quick breakfast recipe and it is delicious.  Yams and sweet potatoes contain tons of vitamin A and fiber so they are the perfect complex carbohydrate.  Just add some coconut oil, cinnamon, walnuts and pecans for lots of flavor, protein, and healthy fat to hold you over till lunch.

Ingredients:yam with nuts

  • 1 medium sized yam
  • 1/4 cup chopped walnuts/pecans
  • 1 Tbsp coconut oil
  • dash cinnamon
  • 1 tsp shredded coconut

Directions:

  • Poke holes with a fork and microwave small-medium potato for 5 minutes
  • Once cooked fully, slice in half, long ways
  • Top with ingredients of your choice
