I have been playing with this recipe for a while and finally perfected it! Gluten free baking is torturous for me but this baking recipe is quite easy!
Ingredients:
- 2 cup rolled oats
- 1 cup sunflower seeds
- 1/2 cup flax meal
- 1/2 cup almond meal
- 2 Tbsp chia seeds
- 1 tsp sea salt
- 1 Tbsp honey or maple syrup
- 3 Tbsp melted coconut oil, ghee or olive oil
- 1.5 cups water
- 1 egg
Directions:
- Put all dry ingredients in a blender or food processor. Blend/chop until the mixture is a broken down to very small pieces (see picture).
- Whisk honey, oil, water and egg.
- In a bowl, combine wet and dry ingredients (everything). Stir well. Dough should become thick (but add water if too thick).
- On a big sheet pan, line with tin foil or wax paper. Spray with non-stick oil. Spread the dough evenly (slightly thinner than a slice of bread).
- Bake 350 for 25 min.
- Cut into smaller pieces. Store at room temperature in air tight container. You can also freeze.
Top with nut butter + banana slices or mashed avocado. It’s an awesome hearty breakfast or snack.
