Betsy’s Ginger Dressing

I LOVE the bright orange ginger dressing at Japanese restaurants! I thought it would be a complicated recipe filled with sugar but it’s actually simple and healthy – at least my version is.

Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/3 cup rice vinegar
  • 2 large carrots, chopped into big chunks
  • 1/2 medium white onion
  • fresh ginger (about the size of 2 dice)
  • 1 Tbsp honey
  • 2 tsp toasted sesame oil
  • salt, as desired

Add all ingredients to Vitamix (or quality blender) or food processor and puree.
