Betsy’s Energy Balls (No Bake)

Ingredients:

  • 2 cup oats (old-fashioned)
  • 1 cup almond or sunflower seed butter (PB is ok), melted
  • 1 cup ground flax meal
  • 1/2 cup coconut flakes (unsweetened)
  • 3 Tablespoons chia seeds
  • 1/4 cup mini chocolate chips
  • 1/4 cup honey
  • 1 tsp cinnamon or cocoa powder for flavor

Directions:

  1. Make sure nut butter is melted or very soft.  This will prevent the balls from falling apart.
  2. Combine and mix all the ingredients well in a bowl. Cover and chill dough in the refrigerator 30 minutes.
  3. After 30 min, roll into small balls, about 1 inch in diameter.
  4. Store in frig for 1 week.  Freeze any leftovers
