I’ve ordered Asian Salads at restaurants and I am usually disappointed. I always think…I can make this better myself. Here is my simple yummy concoction.
Salad Ingredients:
- 1 head Romaine, chopped
- 1/2 bag cole slaw mix
- 2 green onions, diced
- 1/2 cucumber, chopped in bite sized pieces
- 1/2 red pepper, chopped in bite sized pieces
- 1 cup cooked brown rice or quinoa
- 1/2 cup slivered almonds
- 1 cup edamame beans
- Orange Ginger Dressing
- Other Ideas: chopped chicken breast, shrimp, Chinese noodles, sesame seeds, avocado, broccoli, snap peas, mandarin oranges (monitor sugar)
